Pa’piong is one of the special foods of Tana Toraja. Uniquely, this food is served in bamboo sticks which are quite large and are usually served at large local events. The spices in making this food is also quite simple, including chili, onion, garlic, salt, ginger slices, and also lemongrass stems. What makes this culinary unique is its cooking technique, using bamboo as a medium which is then directly grilled for 3-4 hours when the color of the bamboo begins to blacken.
